Recipe for Coconut Date Balls

1 lb. Organic Medjool Dates pitted and finely chopped
1/3 cup organic maple syrup
1-2 tbs organic coconut oil
Optional : 1/2 cup chopped almonds

Sauté dates, maple syrup and almonds in coconut oil over medium heat
for about 10 minutes until mixture become slightly sticky . Cool about
10 minutes.

In a bowl combine date caramel like mixture with :

1  1/2 cups organic rolled oats
2 tsp. Vanilla extract
2 tablespoons chia seeds
2 tablespoons ground flax seeds
1/2 tsp Himalayan pink  or sea salt
Optional additions :
2 Tbs cacao
2 tablespoons almond or peanut butter

Mix in food processor or with wooden spoon until mixture is uniform .
Let stand 5-10 minutes. Roll to bite size balls.

Prepare a bowl with 1/3 cups organic unsweetened shredded coconut.

Roll each ball in  shredded coconut.

Can be served immediately or stored in the refrigerator in an air tight
container for a healthy sweet tooth alternative treat.
